About:
From the lush highlands of Apaneca in western El Salvador comes a coffee as rich in history as it is in flavour. Grown on the slopes of Cerro de las Ranas (“Hill of Frogs”), this small-lot coffee is cultivated in volcanic soil near a lagoon known for its frog population — a fitting symbol for its vibrancy and depth.
This exceptional lot is brought to life by JASAL, a sixth-generation family farm run by Andrés and José Jr. Salaverria. Their dedication to quality and community shines through every stage — from meticulous cultivation to their commitment to worker wellbeing, including access to healthcare, housing, and education.
About the Process:
Yellow Honey (Semi-washed) — After harvesting, cherries are de-pulped but dried with a generous layer of sticky mucilage still attached. This creates a beautifully sweet cup with complex acidity and a creamy body. The combination of honey processing and high elevation yields a balanced, fruit-forward coffee that truly stands out.
