If you’ve ever wondered how decaf coffee is made — especially the good kind — the answer is surprisingly simple: water, time, and science.

The Swiss Water® Process removes caffeine from green coffee beans using only water and filtration — no chemical solvents. Instead, it relies on a natural process called diffusion, where caffeine gently moves out of the beans and into water while the flavour compounds are preserved.

Step-by-step (the simple version)

1. Beans soak in hot water
Green coffee beans are immersed in hot water so caffeine and flavour compounds dissolve.

2. The caffeine gets filtered out
That water is passed through special carbon filters that capture the caffeine molecules but allow the flavour elements to remain.

3. Flavour-rich water is reused
Now the beans are soaked again in this flavour-saturated water. Because the water already contains the coffee’s flavour compounds, only the caffeine continues to move out of the beans.

4. Repeat until nearly caffeine-free
The process continues until about 99%+ of the caffeine is removed, while keeping the character of the coffee intact.
